What do you do when you find you have a couple of pineapples and a red pepper in the house and red onions in the garden?
Well, you chop it up and make pineapple chutney.
I was also left with quite a few canning jars after the wedding, so I brought out the old canner to save some for winter. When the kids were young and we first moved to the acerage I used to do a lot of canning. Time seems to be in short supply that past few years and the canning supplies have sat on the shelf downstairs.
Does anyone do canning? I think I'll try some dill carrots next. I also see lots of jars and and supplies being sold in the stores so there must be a few people around that enjoy canning, but when I stopped in at a major grocery store today for pickling salt and dill seeds there was none to be found. Not even an empty spot where they might have been sold out. If you do canning, what's your favorites?

I love pineapple and the combination in your jar sounds delicious! I've not pickled for a few years although it is coming up for the time of year to do it - I used to pickle red cabbage to use with a meat hotpot.
